Chef by Necessity, Not by Choice š½ļøš

With a show of hands, who loves cooking?Ā
Not this girl.Ā
I love to eat, but I am not a fan of being the one to put the pot on the burner. Nope.
This year is different. I am determined to stop wasting money eating out all the time. I know how to cook. Iām actually pretty good at it. But I find it to be such a freakinā hassle. When I come home from work, I donāt want to have to get out pots and pans and follow recipes. Iām tired. I just want to lay on my couch and watch Severance or read a book in peace.Ā
Alas, that is not my lot in life at the moment. So Iām sucking it up and getting in that kitchen more often because Iām an adult, and I can do hard things.
Sunday, I decided to do meal prep for the week. Ugh! So annoying. I made breakfast burritos (cheese, mushrooms, spinach, eggs, and honey-glazed turkey from Stew Leonardās--everyone and they mama loves that turkey, so you have to go as soon as the store opens to get it.) I then placed them in the freezer so I can just grabāem and flingāem in the air fryer in the morning.
I was pretty worn out so I took a break to recoup on the couch. When my energy tank was refilled, I was disappointed to learn I did not have all the ingredients for my next culinary feat. After running out to the supermarket, yet again, I settled in to make my version of the popular Costa Rican dish, Casado. I had it when I went last year.Ā Itās so simple and delicious: rice, I used Jasmine, obviously; black beans, cabbage and plantains. It took over an hour to make all that and plate it, but itās done, and I donāt have to worry about food for the rest of the week.
